Blue Apron Box Review

Blue Apron is a fun, new subscription service that delivers you all the ingredients that you need and the recipes to go along with it.  It is such a great idea.  The box arrived at a good time too.  My mom was in town visiting.  She kept coming into the kitchen making a surprised look on her face.  As if she never saw me cook before.  Inside the Blue Apron box were 3 meals.  Each recipe card has wonderful directions on the back with pictures.  All the ingredients, including herbs and condiments are measured out for you.  I really love that you do not have too much to think about.  The only challenge for me was following directions.  I usually never follow recipes exactly as they are.  Each dinner/lunch is a 2 person serving.  I found there to be a little more then that.

I have had my mom's stuffed peppers before but never made them on my own.  This recipe is Stuffed Peppers with Beef & Millet.  I never heard of millet before this meal.  It is an ancient whole grain.

I was happy with the way it came out.  The hubby liked it too.  I would definitely use this recipe again.  The directions were easy to follow and the ingredients were fresh.  There was actually enough beef & millet mixture to use for another pepper.  I just put it in a bowl for leftovers.  


Shrimp Spaghettini with Chilis, Mint & Lemon

I think this was my favorite meal in the box.  Shrimp is a favorite of mine.  What I really loved was that the shrimp came peeled and deveined.  First time using a shallot and sweet Italian pepper.


Shrimp Spaghettini with chilis, mint, and lemon tasted fresh with a little kick from the pepper flakes which I didn't put on my mom's plate.  She doesn't like spicy food.  


Mexican-Style Chopped Salad with Chicken & Corn

Last but not least was the salad meal which I used as Dinner for my mom and I.  My husband isn't a big salad person.  I was excited to use Queso Fresco for the first time.  One of my favorite things about this salad was the dressing.  The dressing consists of lime, mayo, olive oil, salt and pepper.  It tasted great.  I enjoyed the radishes and corn too.

Overall, the Blue Apron box was an enjoyable experience.  Cooking new recipes and using ingredients that I might normally not buy was fun.  I think Blue Apron is good for those who have busy schedules and don't always have the time to go shopping.  It is also great as a gift.  Why not?  Some people don't want to find a recipe and also go searching for the ingredients.  Or they can be like me, a tired mom who sometimes runs out of creative ideas in the kitchen.
